  • 2 large egg whites

  • Step 1: Prepare the Sugar Syrup
    - In a saucepan, combine the granulated sugar, light corn syrup, and water.
    - Heat over medium heat, stirring occasionally, until the sugar is completely dissolved.
    - Attach a candy thermometer to the saucepan and let the mixture boil without stirring until it reaches 250°F (the hard-ball stage).
  • Step 2: Whip the Egg Whites
    - While the sugar mixture is cooking, beat the egg whites in a stand mixer until stiff peaks form.
    - Gradually pour the hot sugar syrup into the whipped egg whites, beating constantly at high speed.
  • Step 3: Add Flavor and Texture
    - Add the vanilla extract and continue beating until the mixture holds its shape and loses its glossy appearance.
    - Gently fold in the chopped pecans or walnuts if desired.
  • Step 4: Shape the Candies
    - Using two spoons, drop the mixture onto a baking sheet lined with parchment paper.
