  • 4 boneless ribeye steaks (6-8 oz each)
  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 2 sprigs fresh rosemary
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Instructions
 

  • Step 1: Prepare the Potatoes
    - Preheat the oven to 425°F (220°C).
    - In a large mixing bowl, combine the halved potatoes with 2 tablespoons of olive oil, paprika, onion powder, garlic powder, salt, and pepper, tossing until evenly coated.
    -Spread the potatoes evenly on a baking sheet. Roast for 20-25 minutes until crispy and golden.
  • Step 2: Season the Steaks
    - While the potatoes are baking, use paper towels to pat the steaks dry.
    -Season both sides generously with salt and black pepper.
  • Step 3: Cook the Steaks
    - Heat 1 tbsp olive oil and 2 tbsp butter in a cast iron skillet over medium-high heat.
    - Put the steaks in the skillet and sear them for 2-3 minutes on each side.
    - Reduce the heat to medium, add the garlic and rosemary, and spoon the melted butter over the steaks.
    - Cook to your desired doneness (125°F for medium-rare, 135°F for medium). Remove and rest for 5 minutes.
  • Step 4: Serve and Garnish
    - Plate the roasted potatoes alongside the steaks.
