Ingredients
  

  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp baking soda
  • 1 tbsp ground cinnamon
  • 1 tsp salt
  • 1 ½ cups unsalted butter softened
  • 1 ½ cups granulated sugar
  • 1 ½ cups packed brown sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 3 cups semi-sweet chocolate chips
  • 3 cups old-fashioned rolled oats
  • 2 cups sweetened shredded coconut
  • 2 cups chopped pecans

Instructions
 

  • Step 1: Heat the oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper. In a large bowl, mix together the flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • Step 2: Prepare the dough baseIn another large bowl, beat the softened butter with the granulated sugar and brown sugar until creamy (2-3 minutes).Add the eggs, one at a time, mixing well between each addition. Stir in the vanilla extract.
  • Step 3: Combine the ingredientsGradually add the flour mixture to the butter and sugar mixture, on low speed, until combined.Using a spatula, stir in the chocolate chips, oats, coconut and pecans.
  • Step 4: Shape and bake the cookiesUsing an ice cream scoop, drop balls of dough onto the baking sheets, spacing them 5 cm apart. Flatten the balls slightly.Bake cookies for 12 to 15 minutes, until edges are golden brown.Let the cookies rest on the baking sheet for 5 minutes before removing them to a wire rack to cool completely.

Notes

  1. If you prefer less sweet cookies, reduce the chocolate chips to 2 cups.
  2. Pecans can be replaced with walnuts or hazelnuts.
  3. The dough can be refrigerated for 20-30 minutes to prevent the cookies from spreading too much while baking.
