Ingredients

  • For the Steak:
  • 1 ½ lbs flank steak or skirt steak
  • 2 tbsp olive oil
  • For the Chipotle Marinade:
  • 2 tbsp chipotle peppers in adobo sauce finely chopped
  • 3 garlic cloves minced
  • 2 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional Garnishes:
  • Fresh cilantro
  • Lime wedges

Instructions

  • Step 1: Prepare the Marinade
-In a mixing bowl, whisk together the chipotle peppers, garlic, lime juice, olive oil, cumin, paprika, oregano, salt, and pepper.
-Taste the marinade and adjust seasonings as desired.
  • Step 2: Marinate the Steak
Place the steak in a sealable plastic bag or a flat container.
-Pour the marinade over the steak, ensuring it is fully coated.
-Seal and refrigerate for at least 1 hour (up to 24 hours for maximum flavor).
  • Step 3: Cook the Steak
-Heat your grill or grill pan to medium-high heat before cooking.
Remove the steak from the marinade, letting any extra liquid drain off.
-Cook the steak for 4–5 minutes per side for medium-rare, or until desired doneness is achieved.
  • Step 4: Rest and Serve
-Place the steak on a cutting board and let it rest for 5 minutes to retain its juices.
Slice against the grain into thin strips and serve with garnishes like fresh cilantro and lime wedges.

Notes

  • For an extra smoky flavor, grill the steak over charcoal.
  • Leftovers can be used in tacos, salads, or burrito bowls.
  • Adjust chipotle peppers for a milder or spicier taste.
