- 1 can, 14 oz of salmon, drained and flaked
- 2 cups of cooked white or brown rice
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup of frozen peas and carrots, or substitute with fresh vegetables of your choice.
- 2 tablespoons soy sauce optional
- 1 teaspoon lemon juice
- Salt and pepper to taste
Prepare the Base:- Heat a drizzle of olive oil in a pan over medium flame.. Add chopped onion and garlic, sautéing until fragrant and lightly golden (about 3–4 minutes). Add the Vegetables:- Stir in the peas and carrots, cooking until tender (5–7 minutes). Season with a pinch of salt and pepper. Combine Salmon and Rice:- Add the flaked canned salmon to the pan. Stir gently to mix it with the vegetables. Pour in soy sauce and lemon juice, then add the cooked rice. Mix until evenly combined and heated through. Finish and Serve:- Taste and adjust seasonings as needed. Serve warm, garnished with parsley or green onions if desired.
