- 3 lbs 1.4 kg boneless beef short ribs.
- 2 tablespoons olive oil.
- 1 medium onion, chopped.
- 3 cloves garlic, chopped.
- 1 cup 240 ml beef broth.
- 1 cup 240 ml red wine or red grape juice.
- 2 tablespoons tomato paste.
- 2 tablespoons flour or gluten-free substitute.
- 1 tablespoon of brown sugar.
- 2 tablespoons Worcestershire sauce.
- 1 sprig of fresh thyme.
- 1 bay leaf.
- Salt and pepper to taste.
Step 1: Prepare and sear the short ribs 1- Preheat your oven to 325°F (160°C).2- Season the short ribs with salt and pepper.3- Warm olive oil in a large Dutch oven over medium to high heat.4- Brown the ribs on all sides until they develop a golden crust. Remove and set aside. Step 2: Prepare the aromatic base1- In the same casserole dish, sauté the onion and garlic until tender. 2- Sprinkle in the flour and stir thoroughly to create a roux.3- Add the tomato paste and brown sugar and mix. Step 3: Add liquids and flavorings1- the red wine and beef broth into the casserole dish, scraping the bottom to deglaze.2- Add the Worcestershire sauce, thyme and bay leaf.3- Return the short ribs to the casserole dish and cover with a lid.
