Ingredients
  

  • 3 lbs 1.4 kg boneless beef short ribs.
  • 2 tablespoons olive oil.
  • 1 medium onion, chopped.
  • 3 cloves garlic, chopped.
  • 1 cup 240 ml beef broth.
  • 1 cup 240 ml red wine or red grape juice.
  • 2 tablespoons tomato paste.
  • 2 tablespoons flour or gluten-free substitute.
  • 1 tablespoon of brown sugar.
  • 2 tablespoons Worcestershire sauce.
  • 1 sprig of fresh thyme.
  • 1 bay leaf.
  • Salt and pepper to taste.

Instructions
 

  • Step 1: Prepare and sear the short ribs
    1- Preheat your oven to 325°F (160°C).
    2- Season the short ribs with salt and pepper.
    3- Warm olive oil in a large Dutch oven over medium to high heat.
    4- Brown the ribs on all sides until they develop a golden crust. Remove and set aside.
  • Step 2: Prepare the aromatic base
    1- In the same casserole dish, sauté the onion and garlic until tender.
    2- Sprinkle in the flour and stir thoroughly to create a roux.
    3- Add the tomato paste and brown sugar and mix.
  • Step 3: Add liquids and flavorings
    1- the red wine and beef broth into the casserole dish, scraping the bottom to deglaze.
    2- Add the Worcestershire sauce, thyme and bay leaf.
    3- Return the short ribs to the casserole dish and cover with a lid.
  • Step 4: Slow cooking in the oven
    1- Place the casserole dish in the preheated oven and cook for 2 hours 30 minutes.
    2- Check the cooking: the meat should be tender and easily come off with a fork.
    3- Adjust seasoning as needed before serving hot with a side of your choice.

Notes

  • You can substitute beef broth for the red wine if you prefer a non-alcoholic version.
  • This recipe can be adapted for the slow cooker: cook on low for 6 to 8 hours.
  • Serve this dish with mashed potatoes, rice or sautéed vegetables for a balanced meal.
